Consortium for the protection of Provolone Valpadana cheese

The reason why the Consortium for the defence of the protected designation of origin Provolone Valpadana cheese exists is explained in its name itself: the protection.

The point is that this cheese, that has a strong identity both in the Italian and in the world scenery, needs an authoritative and official Body in order to represent the raw material (milk) producers, the processors and the ripeners (that bring the cheese to a more than one year ripening) and to protect it, to guarantee its continuous production and excellence and to publicize its qualities.

Thus, the Consortium controls the different phases of the life of Provolone Valpadana and it carries out this task in a really strict way, entrusted by the Ministry of the Agricultural, Food, Forest Policies. But it does not merely supervise: keeping an eye to the future and one to the markets development, it also offers technical- scientific support, in order to improve the production technologies more and more, both from the sanitary and organoleptic point of view. In practice: the Consortium is a shield that protects all the actors of the chain from any kind of unfair competition, while for the consumers it is a guarantee against fraud, counterfeiting and related economic and health damages.

The Consortium, established in 1975, has its head office in Cremona, just in the middle of the area where Provolone Valpadana is produced.
